Poached Eggs…Let’s talk about them.

I woke up this morning (a MONDAY morning) to my dog howling at 7am.

He’s a basset hound sometimes I just think he can’t help it other times I think he knows exactly what he’s doing.

Anyways, so I decided to drag myself down stairs, tired, a bit grumpy, only to find that I was OUT OF COFFEE.

OUT. NONE. ZIP. ZERO. NO COFFEE IN SIGHT.

(Cue hulk anger and madness)

Anyways I got over it and moved on to realize my avocado was ripe so my Monday was instantly looking up.

In the past couple weeks I have mastered poached eggs. 

This took me awhile. Not only are poached eggs really good for you (in moderation like anything), super fast to make, but they’re also delish!

You can pair them with so many different foods to always make sure your breakfasts are not only healthy but SO GOOD.

So, this is what I did for my breakfast this morning:

If you aren’t sure how to poach eggs I have a fast and easy method for you.

First, I put an appropriate sized pot filled with water on the stove at high heat and wait for it to boil.

I always add a pinch of salt to the water, and for some reason you’re supposed to add vinegar to the water of poached eggs, so I add a splash of apple cider vinegar.

I wait for the water to come to a complete boil, and then I turn off the heat.

At this point, I take a spoon and stir the water. After that I crack the egg into the water and push it lightly with the spoon to one side of the pot so it moulds together.

I like my poached eggs soft poached, so I put on a timer for 2 minutes and that it the perfect amount of time for a nice runny poached egg!

While the eggs are in the hot water I toast my bread and smashed up the avocado onto it. Seriously so good. Sometimes I will also thinly slice a tomato on there as well.

This morning I was too hungry/tired to look for my chili flakes but usually I’ll add some of those with my sea salt and pepper.

I also paired this with a hot lemon water which I try to drink most mornings, but especially this morning because of my coffee situation (still bitter).

Drinking hot water and lemon in the morning is amazing for your metabolism.
