Easy, Fast, Healthy, Meal Idea.


So it is that time of year. Summer is over, it’s back to school, and back to actual routine.

As much as I love to spend time in the kitchen cooking and baking, I am completely guilty of being super lazy and just picking up sushi for dinner.

We’ve all been there, it’s been a long day, you’re tired, you’re hungry, and the last thing you want to do is spend an hour cooking.

However, I promised myself that this fall I would put in a serious effort to try and not do that as often.

Not only to just try and be a little bit healthier, but to also save a little bit of money!

So tonight I thought I would share a meal that is a fast, healthy, easy, and really tasty meal. I made it tonight and anyone can easily make this at the end of a long day.


The Chicken Breast

To start I put a pan on medium heat with some olive oil in it. While the pan began to heat up, I coated a chicken breast with a bit of olive oil, seasoned it with salt and pepper, and then put it in the pan. I left it on that side for about a minute.

After a minute I flipped the chicken onto the other side, turned the heat to low, covered the pan, and put on a timer for 15 minutes. I did not uncover it, I just left it. Once the timer went off I cut the chicken to make sure it was cooked all the way through and then it was ready to serve!

The Broccoli


I swear this is just such an easy way to cook broccoli and it always turns out well so this is how I always do it.

In a microwave safe bowl I fill it a little less then half way with water and put as much broccoli as I plan to eat into the bowl. Then I cover it (again with a microwave safe) plate and put it in the microwave for three minutes.

Obviously you can do more or less time depending on how you like your broccoli cooked.


So simple, so fast, soooo good.

The Slaw

Honestly, coleslaw is a very reasonably priced veg that can be added to a meal to round it out and it is really good.

I am quite picky about coleslaw dressing, however I LOVE this one made by Renee’s.


Not only is it fairly healthy, it is super super tasty. I always add a tiny bit of pepper and then you’re ready to go!

In total this meal took about 20 minutes. It was exactly what I needed to squash my hunger (and the sushi craving…).
